Sushi is served raw and it rests against the box for the whole of its short life. That makes one question more useful here than anywhere else in this category. What is the board, and what has actually been confirmed about the surface the fish is sitting on?
Cardboard covers several constructions. A sushi box can be built from folding carton board, from kraft, from corrugated, or from rigid board under a printed wrap. Those are four different builds, each with its own printing and finishing behaviour.
For most sushi the answer is a folding carton. It is the food-carton construction, and it carries the widest set of finishing options.

None of that settles the surface. A board gets chosen, then coated, printed and finished, and it is the finished surface that meets the food.
Read the pages selling this product and the material gets described in adjectives. One goes further and offers a United States regulator’s approval as its proof.
That regulator has no role in UK food packaging, so the claim is at best a partial answer here and it is offered as a complete one. The adjectives have the same problem in a quieter form. Each names a conclusion without naming the material it applies to, the test behind it, or who carried it out.
The version a supplier can actually answer is narrower. Which board, with which coating, was confirmed suitable for direct contact with a raw chilled product, and confirmed by whom. A supplier holding that will hand you a specification. An adjective is what arrives instead.
Sushi is bought by eye more than most food, so a window is a genuine option here. It is worth knowing what one is made of.
A window needs a film patch or a die-cut aperture, and that choice affects both cost and recyclability. A film patch sets a second material into the opening, and what that film is made of is worth asking about, because it decides how the finished box gets handled afterwards. That route makes a box described as cardboard into cardboard plus a panel of something else. A die-cut aperture keeps the box to one material and leaves the opening bare.
An unlaminated paperboard construction may be easier to process through suitable paper-recycling streams than a heavily laminated alternative. Final recyclability depends on the full material and finishing specification and the facilities available locally.
